Dash teaspoon freshly ground black pepper and 1 tablespoon sesame oil for marinating
1tbspfreshly chopped green onion
1tablespoonfreshly minced garlic
1hot chilli chopped
1tablespoonrice cooking wine
1tablespoonlight soy sauce
1tablespoondark soy sauce
½teaspooncornstarch mixed with 1 tablespoon cold water to form a slurry
2teaspoonsroasted sesame seeds
Rinse salmon with cold water and pat dry. Cut into 4 equal portions and place in a greased baking dish. Season with black pepper and sesame oil.
Preheat the oven to 425 degrees F and then bake for 12 minutes until the fish is cooked through and flakes easily.
Heat 1 tablespoon sesame oil in the same non-stick pan over high heat, sauté chopped green onion, minced ginger, garlic and chilli for 30 seconds. Reduce to low heat and add cooking wine, soy sauce, and water. Stir well.
Add slurry mixture, stir and cook until sauce thickens. Remove from heat and set aside.
To serve, pour sauce over baked salmon fillet and garnish with roasted sesame seeds.
