Baked Salmon with Savory Soy Sauce

Ingredients
  

  • 1 lb center-cut salmon fillet without skin
  • Dash teaspoon freshly ground black pepper and 1 tablespoon sesame oil for marinating
  • 1 tablespoon sesame oil
  • 1 tbsp freshly chopped green onion
  • 1 teaspoon minced ginger
  • 1 tablespoon freshly minced garlic
  • 1 hot chilli chopped
  • 1 tablespoon rice cooking wine
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon cold water
  • ½ teaspoon cornstarch mixed with 1 tablespoon cold water to form a slurry
  • 2 teaspoons roasted sesame seeds

Instructions
 

  • Rinse salmon with cold water and pat dry. Cut into 4 equal portions and place in a greased baking dish. Season with black pepper and sesame oil.
  • Preheat the oven to 425 degrees F and then bake for 12 minutes until the fish is cooked through and flakes easily.
  • Heat 1 tablespoon sesame oil in the same non-stick pan over high heat, sauté chopped green onion, minced ginger, garlic and chilli for 30 seconds. Reduce to low heat and add cooking wine, soy sauce, and  water. Stir well. 
  • Add slurry mixture, stir and cook until sauce thickens. Remove from heat and set aside.
  • To serve, pour sauce over baked salmon fillet and garnish with roasted sesame seeds.
