
Almond Flour Banana Blueberry Cake
Ingredients
- 3 Bananas
- 2 eggs
- ½ cup greek yogurt
- 1 tbsp vanilla extract
- 3 tbsp honey
- 1 tbsp baking soda
- 1 ½ cup almond flour
- 1 cup blueberries
- 2 tbsp roasted almond slices
Instructions
- Preheat oven to 350 degrees F and grease a 9”x5” baking pan.
- Combine bananas, eggs, vanilla extract, yogurt and honey.
- In another bowl, combine almond flour and baking soda.
- Add banana mixture into the dry mix, and combine well.
- Gently stir in blueberries.
- Pour batter into baking pan and sprinkle the roasted almond slices on top.
- Bake for 50 minutes or until the surface is golden brown and a knife inserted in the center comes out clean.
- Cool for 20 minutes and serve.
