Almond Flour Banana Blueberry Cake

  • 3 Bananas
  • 2 eggs
  • ½ cup greek yogurt
  • 1 tbsp vanilla extract
  • 3 tbsp honey
  • 1 tbsp baking soda
  • 1 ½ cup almond flour
  • 1 cup blueberries
  • 2 tbsp roasted almond slices


  • Preheat oven to 350 degrees F and grease a 9”x5” baking pan.
  • Combine bananas, eggs, vanilla extract, yogurt and honey.
  • In another bowl, combine almond flour and baking soda.
  • Add banana mixture into the dry mix, and combine well.
  • Gently stir in blueberries.
  • Pour batter into baking pan and sprinkle the roasted almond slices on top.
  • Bake for 50 minutes or until the surface is golden brown and a knife inserted in the center comes out clean.
  • Cool for 20 minutes and serve.
